Cooking with Gas: Last Minute Holiday Party Snacks

stoveThe Christmas and New Year’s party season is here!  And with the party season comes a lot of cooking.  Here are two quick and easy recipes sure to impress at any party.

Spicy Maple Walnuts

These are the perfect accompaniment to a cheese plate and are quick and easy to make. The recipe is easily doubled, and it can be made ahead of time.

1 Cup Walnuts
2 Tablespoons Maple Syrup (the real stuff)
1/16 Teaspoon Cayenne Pepper (or slightly more to taste)
1/16 Teaspoon Sea Salt

Heat a frying pan over medium heat and toast the walnuts for 5-7 minutes.  When they’re slightly brown add the cayenne pepper and salt.  Stir or toss to distribute the salt and cayenne evenly.  Add the maple syrup and turn off the burner.  The syrup will boil rapidly, so stir fast to make sure the nuts are evenly coated.  Let them cool before serving.

Cornbread Jalapeño Poppers

These make a fun appetizer, or they can be a side dish for chili or soup.

12 Jalapeños, cut in half, with seeds and veins removed
1 box Cornbread Mix and ingredients required by mix
1 1/2 Cups Shredded Cheddar Cheese

Make cornbread batter as directed by the box and stir in 1 cup of shredded cheddar cheese.  Fill each Jalapeño half about 3/4 full and place on a cooling rack on top of a baking sheet. Sprinkle the remaining 1/2 cup of cheddar on top of each one.  Bake at 350 for 15-20 minutes.  They are done when the cornbread is firm.
